Fruit and Seed Bars

Ingredients

125g Coconut Oil
150ml Pineapple (or other sweet juice)
Grated zest of one orange
200g Porridge Oats
100g Cranberries
100g Apricots
100g Chopped Almonds/Walnuts
125g Mixed Seeds (Linseeds, sunflower)

You can add Stevia if you’d like it to be sweeter

Replace dried fruit, seeds and nuts with your preferred choice

Method

Warm the coconut oil in a heavy bottomed pan and add the juice, zest (stevia or honey if you’re using it). when warmed through add the oats, fruit, nuts and 100g of seeds and mix well. Spread evenly on a baking tray and flatten out with the back of a spoon or spatula. Sprinkle the remaining seeds over the top and bake in an oven for 25-30 minutes at gas mark 180c in a shallow tin lined with baking paper.

I like to take it out after 20 minutes, cut it in to squares and put it back in the oven so that the edges are all crispy!
